Shopping & Ingredients List:
- 110ml Runny Honey
- 110ml Coconut Oil, melted
- 2 large Eggs
- 3 large ripe Bananas
- 225g Almond Flour
- 1 tsp Baking Powder*
- 75g Sultanas
- pinch of Salt
*gluten-free if required
Method
1. Preheat oven to 190c (170 fan), 375f, gas mark 5.
2. Mix honey & oil in a large bowl until blended. Add the eggs & beat until have a smooth airy mixture.
3. Mash bananas one at a time & add them to the mixing bowl, mixing after each addition.
4. Mix the almond flour, baking powder & salt together. Then add a little at a time to the wet ingredients & gently mix in. Fold in sultanas.
5. Spoon into muffin cases. Bake for 20-25 mins. Allow to cool for 10-15 mins before serving or allow to cool completely & store in airtight tin.
