Courgette & Onion Frittata

Serves: 4

Shopping & Ingredients List:

  • 3 Courgettes, thinly sliced
  • ½ Green Pepper, diced
  • 1 small Onion, diced
  • 2 Garlic Cloves, sliced
  • 6 large Eggs, beaten
  • 1 tsp Paprika
  • ½ tsp Black Pepper
  • 3 tbsp Olive Oil
  • pinch of  Salt
  • 225ml Water

 

Method

  1. Preheat oven to 180c (160 fan), 350f, gas mark 4.
  2. In a large oven safe pan over a medium, combine the water with 1 tbsp Olive Oil, pinch of salt, green pepper, courgette & garlic. Simmer for 5-7 mins. Drain.
  3. Stir in onion, paprika, pepper & cook until onion is transparent. Add the eggs, cook over low heat, until eggs are firm.
