Vanilla & Pecan Cookies

Shopping & Ingredients List:

  • 250g Almond Flour
  • 1 tsp Baking Soda
  • 50g Arrowroot Powder
  • 1 tbsp Honey
  • 6 tbsp melted Coconut Oil
  • 2 tbsp Vanilla Extract
  • 50g finely chopped Pecans
  • Ground Cinnamon for topping

Method

  1. Preheat oven to 180c (160 fan assisted), 350f, gas mark 4. Line two baking sheets with greaseproof paper.
  2. In a food processor combine all the ingredients together until form a sticky dough.
  3. Using a dessert spoon form dough into little balls & flatten into cookie shapes. Leave about 5cm (2 “) gap between the cookies. Makes 36 cookies. 3 cookies per serving.
  4. Sprinkle cookies with cinnamon. Bake for 7-10 mins. Let cookies cool for 30 mins before removing them from the baking sheets.
