Quick Poached Eggs and Avocado Toast

Find yourself running out of time before work? Our quick and easy poached eggs will give you the protein kick you NEED in the morning!

You're going to need:
💪🏻2 Large Eggs
💪🏻2 Tomatoes
💪🏻1 Avocado
💪🏻1/2 Slices of Whole Wheat Bread
💪🏻2tbsp Vinegar

 

Here's what to do:
1) Fill a large saucepan with water, add the vinegar and bring to a hard boil over a high heat.
2) Once boiling, reduce the heat so the water is simmering. Crack in both eggs and cook for 2 1/2 mins.
3) In a frying pan, cook tomatoes cut-side down, until they have softened and slightly caramelised.
4) Scoop out the avocado flesh and mash onto the bread.
5)Place egg on top of the avocado, add the tomatoes on the side and pepper to your liking.
6)Serve and enjoy!
