Olive & Lemon Meatballs

Serves: 4

Shopping & Ingredients List:

  • Meatballs

  • 500g Extra Lean Beef Mince

  • 50g Pitted Olives

  • 1 Lemon, grated rind only

  • 1 Egg Yolk

  • Salt & Pepper to own taste

Sauce

  • 1 tsp Olive Oil

  • 1-2 Onions, chopped

  • 2 Garlic Cloves, crushed

  • 400g tin Chopped Tomatoes

  • 250ml Chicken Stock

Method
1. To make meatballs place all the ingredients in a food processor & blend until chopped & mixed. Using a dessert spoon to measure meat, make 20 balls & chill in fridge for at least 30 mins.
2. Heat oil in large pan. Brown the meatballs on all sides. Set aside meatballs.
3. Add onions & garlic to the pan, gently brown. Add tomatoes & stock. Simmer.
4. Mix all the ingredients together in a slow-cooker & cook on LOW for 6 hours.
