4 Scotch Pancakes
100g Lemon Curd
1 tsp Lemon Rind, grated
30g Cinder Toffee, crumbled
60g 0% Total Greek Yogurt
2 tbsp Runny Honey
Method
1. Put yogurt, lemon curd, lemon rind into bowl & mix.
2. Make pancake sandwich by placing lemon 'cream on one pancake, sprinkle with cinder toffee crumbs, add more lemon 'cream' & top with another pancake. Drizzle with honey before serving.
