 RED PEPPER & FETA MUFFINS

Did you know that protein is the satiating macronutrient?
 
Meaning, protein is most likely to fill you and fuel you for longer!
 
That is why these muffins are perfect for an on-the-go snack or to add to a meal.
 
 
 
 
 
This recipe makes 8-10 Muffins:
 
1 Red pepper
1 Handful of spinach
4 eggs
100ml of milk (Optional)
Seasoning of choice (Salt, pepper, paprika & Cajun)
Feta (or your choice of cheese)
 
How to:
 
- Preheat the oven to 180 degrees & grease your muffin tray
- Prep your veggies!
- Whisk your eggs and seasoning
- Add the veggies first, then the egg mix then the cheese!
- Bake for 10-12 minutes
 
TOP TIP: Serve with salsa, avocado and some wholemeal bread!
