Butternut Squash Soup!

This warming, simple and unbelievably tasty soup will be sure to heat you up as the colder days start setting in!

 

INGREDIENTS:

1 Butternut Squash
1 Onion
2 Potatoes
1 Garlic Clove
Sunflower Oil
Salt
Pepper
900ml Vegetable Stock

METHOD:
1) Spray pan with sunflower oil and bring to a medium heat.
2) Cook onion, butternut squash and potatoes together, mix in crushed garlic clove, salt and pepper.
3) Add 900ml vegetable stock. Cook for 40 minutes at medium heat.
4) Blend until smooth.
5) Serve and enjoy!
