Bacon & Egg Muffins

Serves: 2

Shopping & Ingredients List:

  • 1 Wholemeal Muffin, split in half & toasted

  • 4 rashers Lean Bacon

  • 2 large Eggs

  • 1 large Tomato, sliced

  • 1 large flat Mushroom, sliced

  • 2 tbsp Vegetable Stock

Method
1. Grill bacon for 2-3 mins on each side until cooked. Set aside & keep warm.
2. Grill tomato slices for 2-3 mins.
3. Meanwhile pan of water & gently break eggs into the pan. Poach for 3-4 mins until set & remove using slotted spoon.
4. At same time, place mushrooms in a pan with stock bring to boil, cover & simmer for 4-5 mins.
5. Assemble all the ingredients on top of the toasted muffin & serve.
