Apricot Squares

Shopping & Ingredients List:

  • 200g Almond Flour
  • ΒΌ tsp Baking Soda
  • 100g unsweetened Desiccated Coconut
  • 75g dried ready to eat Apricots, chopped
  • 2 large Eggs
  • 2 Egg Whites
  • 1 tbsp Vanilla Extract
  • 4 scoops Vanilla Protein Powder
  • 2 Apples, peeled & diced

Method

  1. Preheat oven to 180c (160 fan assisted), 350f, gas mark 4. Grease a square baking dish with a little coconut oil.
  2. Simmer apples in a saucepan in a little water until they can be mashed with a fork. Allow to cool.
  3. In a food processor combine all the ingredients together until a batter forms. Press into the baking dish.
  4. Cover dish with tin foil. Bake for 20 mins. Remove foil & bake for a further 5-8 mins. Allow to cool for 1 hour. Cut into squares.
